Parsnip Ginger Soup
Ingredients:
- 2-3 medium-size parsnips
- 1 carrot (optional)
- 1 potato
- 1/2 onion
- 1 table-spoon cut ginger
- 1 table-spoon Cumin powder
- 1 table-spoon Coriander powder
- 1 bay-leaf
- 2 tea-spoons oil
- 1 table-spoon salt
- 2 cups of Vegetable broth
Procedure:
- Cut parsnip into small pieces. Core of a parsnip can be hard. Scoop it out, if it is too hard.
- Cut onion, carrot and potato into small pieces.
- Heat oil in a pot.
- Put one bay leaf in it.
- Slide in the onion and carrot in it.
- Add Cumin powder and Coriander powder.
- Add Carrot and Parsnip pieces to it.
- Saute for 2-3 minutes.
- Add water and broth.
- Cover the pot, and let it cook for 5-7 minutes. or until the parsnips are soft.
- Pour the mixture in a blender and make it a puree.
- Pour the puree in another pan, and adjust the consistency.
- Add lemon juice and Pepper, to the taste.
- Garnish with Parsley leaves.
