Parsnip Ginger Soup

Parsnip Ginger Soup

Ingredients:
  • 2-3 medium-size parsnips
  • 1 carrot (optional)
  • 1 potato
  • 1/2 onion
  • 1 table-spoon cut ginger
  • 1 table-spoon Cumin powder
  • 1 table-spoon Coriander powder
  • 1 bay-leaf
  • 2 tea-spoons oil 
  • 1 table-spoon salt
  • 2 cups of Vegetable broth

Procedure:
  • Cut parsnip into small pieces. Core of a parsnip can be hard. Scoop it out, if it is too hard.
  • Cut onion, carrot and potato into small pieces.
  • Heat oil in a pot.
  • Put one bay leaf in it.
  • Slide in the onion and carrot in it.
  • Add Cumin powder and Coriander powder.
  • Add Carrot and Parsnip pieces to it.
  • Saute for 2-3 minutes.
  • Add water and broth.
  • Cover the pot, and let it cook for 5-7 minutes. or until the parsnips are soft.
  • Pour the mixture in a blender and make it a puree.
  • Pour the puree in another pan, and adjust the consistency.
  • Add lemon juice and Pepper, to the taste.
  • Garnish with Parsley leaves.
